Can’t stand the heat? Then get out of the kitchen! With summer in full swing, slaving over a hot stove is the last place you want to be. Raw vegetables and summer salads are the perfect way to beat the heat. And in a study conducted by the University of California, Los Angeles and Louisiana State University, researchers found that consuming one serving of salad or raw vegetables a day greatly increases the chances of meeting the recommended daily intake of certain nutrients. Those in the study who consumed salads daily were found to have high levels of vitamin C, lycopene and folic acid.
And to find some recipes that actually make salads appetizing, we enlisted the help of Elana Horwich, founder of private cooking school Meal and Spiel. Since 2010 Horwich has been hosting classes and posting blogs on how to prepare healthy meals at home. She has appeared on Good Day LA, KCAL, KNBC and KTLA, is considered an expert in healthy holiday cooking and knows her way around clean eating.
